{"id":1371,"date":"2020-08-23T07:16:12","date_gmt":"2020-08-23T12:16:12","guid":{"rendered":"http:\/\/elainecarroll.ca\/wordpress\/?p=1371"},"modified":"2025-08-24T15:14:11","modified_gmt":"2025-08-24T20:14:11","slug":"mild-salsa","status":"publish","type":"post","link":"https:\/\/elainecarroll.ca\/wordpress\/?p=1371","title":{"rendered":"Mild Salsa"},"content":{"rendered":"<p>This is a really nice salsa recipe that requires no cooking, it&#8217;s mild but has a little kick to it in the back of your throat (nothing major though).\u00a0 If you want it spicier, add peppers.\u00a0 The original recipe called for green tomotoes, but I had red ones to use and they worked out great.\u00a0 A friend of mine did hers with green and she really liked it.<\/p>\n<p><strong>Ingredients<\/strong>:<\/p>\n<ul>\n<li>About 13 cups chopped (quarters or eighths depending on size) Roma tomatoes<\/li>\n<li>2 medium onions (we used 1.5 but we had the stalks of the onions in since they were out of our garden)<\/li>\n<li>1 green or red pepper<\/li>\n<li>1 c. fresh cilantro<\/li>\n<li>2 tbsp. minced garlic<\/li>\n<li>1\/4 c. sugar<\/li>\n<li>1 tsp. salt<\/li>\n<li>8 &#8211; 10\u00a0tbsp. lime juice<\/li>\n<li>3 tbsp. fresh oregano (you could probably use dried too, just crush it in your fingers before to release the taste)<\/li>\n<li>3\/4 tbsp. cayenne<\/li>\n<li>a couple of pinches red pepper flakes<\/li>\n<li>1 tbsp. white vinegar<\/li>\n<\/ul>\n<p><strong>Preparation<\/strong>:<\/p>\n<p><span style=\"color: rgba(0, 0, 0, 0.95);\">Combine tomatoes, onions, and peppers in a large bowl.<\/span><\/p>\n<p><span style=\"color: rgba(0, 0, 0, 0.95);\">Mix cilantro, sugar, garlic, oregano, vinegar, and cayenne pepper together in a small bowl.<\/span><\/p>\n<p><span style=\"color: rgba(0, 0, 0, 0.95);\">Fill food processor with about 2 cups tomato mixture, 1 tbsp.\u00a0lime juice, and 1\/4 of the spice mixture; blend to desired consistency and pour into a large bowl.
