{"id":1377,"date":"2020-08-23T10:20:00","date_gmt":"2020-08-23T15:20:00","guid":{"rendered":"http:\/\/elainecarroll.ca\/wordpress\/?p=1377"},"modified":"2025-08-24T15:13:59","modified_gmt":"2025-08-24T20:13:59","slug":"corn-salsa","status":"publish","type":"post","link":"https:\/\/elainecarroll.ca\/wordpress\/?p=1377","title":{"rendered":"Corn Relish"},"content":{"rendered":"<p>From the Canadian Living Test Kitchen (I trust their recipes)&#8230;<\/p>\n<p><strong>Ingredients<\/strong>:<\/p>\n<ul>\n<li>2 cups white vinegar<\/li>\n<li>1 cup granulated sugar<\/li>\n<li>1 tablespoon salt<\/li>\n<li>1 tablespoon dry mustard<\/li>\n<li>1\/2 teaspoon celery seeds<\/li>\n<li>1\/2 teaspoon turmeric<\/li>\n<li>1\/2 teaspoon hot pepper sauce<\/li>\n<li>5 cups corn kernels<\/li>\n<li>1 1\/2 cup finely chopped onion<\/li>\n<li>1 cup finely chopped celery<\/li>\n<li>3 tablespoons all purpose flour<\/li>\n<li>1 cup diced sweet red pepper<\/li>\n<li>1 cup diced sweet green pepper<\/li>\n<\/ul>\n<p><strong>Preparation<\/strong>:<\/p>\n<p><span style=\"color: #000000;\">In large Dutch oven or saucepan, bring vinegar, sugar, salt, mustard, celery seeds, turmeric and hot pepper sauce to boil. Stir in corn, onions and celery; reduce heat and simmer, stirring often, until softened, about 20 minutes.<\/span><br style=\"color: #000000;\" \/><br style=\"color: #000000;\" \/><span style=\"color: #000000;\">Whisk flour with 3 tbsp (45 mL) cold water; whisk into pan. Add red and green peppers; bring to boil and cook, stirring often, until thickened, about 5 minutes.<\/span><br style=\"color: #000000;\" \/><br style=\"color: #000000;\" \/><span style=\"color: #000000;\">Fill hot 1-cup (250 mL) canning jars, leaving 1\/2-inch (1 cm) headspace. Cover with prepared lids. Screw on bands until resistance is met; increase to fingertip tight.
