{"id":305,"date":"2008-10-09T22:14:11","date_gmt":"2008-10-10T03:14:11","guid":{"rendered":"http:\/\/elainecarroll.ca\/wordpress\/?p=305"},"modified":"2014-12-26T12:54:57","modified_gmt":"2014-12-26T17:54:57","slug":"homemade-chicken-stock","status":"publish","type":"post","link":"https:\/\/elainecarroll.ca\/wordpress\/?p=305","title":{"rendered":"Homemade Chicken Stock"},"content":{"rendered":"<p>Here&#8217;s a good chicken stock recipe that I got from a magazine and will modify it just to perfect it \ud83d\ude42<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 stewing hen (or 3lbs\/1.5kg chicken pieces)<\/li>\n<li>3 carrots, unpeeled and coarsely chopped<\/li>\n<li>3 onions, peeled and halved<\/li>\n<li>3 ribs of celery, coarsely chopped<\/li>\n<li>1 plastic container of fresh sliced mushrooms<\/li>\n<li>3 garlic cloves, smashed<\/li>\n<li>4 tbsp parsley<\/li>\n<li>1\/2 tsp (2ml) dried thyme<\/li>\n<li>1\/2 tsp (2ml) peppercorns<\/li>\n<li>2 bay leaves<\/li>\n<li>10 cups (2 L) water<\/li>\n<li>1 tbsp olive oil<\/li>\n<\/ul>\n<p>Preparation:<\/p>\n<p>In a large stockpot, place olive oil in and onions flat side down at medium to high heat. Let them brown. Place chicken a large\u00a0stockpot. Add add remaining ingredients and bring to a boil. Boil gently for 2 hours. Remove bay leaves and discard.
