{"id":451,"date":"2010-08-31T20:32:33","date_gmt":"2010-09-01T01:32:33","guid":{"rendered":"http:\/\/elainecarroll.ca\/wordpress\/?p=451"},"modified":"2017-09-01T20:06:47","modified_gmt":"2017-09-02T01:06:47","slug":"elaines-butterscotch-chip-cookies","status":"publish","type":"post","link":"https:\/\/elainecarroll.ca\/wordpress\/?p=451","title":{"rendered":"Elaine&#8217;s Butterscotch Chip Cookies"},"content":{"rendered":"<p>A friend of mine came to my place last Saturday and both of us cooked.\u00a0 We agreed we would only make things we&#8217;ve never made before.\u00a0 She made Iranian meatballs with chicken inside.\u00a0 I made potato bread which was ok but bland.\u00a0 I don&#8217;t think it&#8217;s worth putting the recipe up for it. I also made cookies for the first time.\u00a0 Absolutely worth posting the recipe.\u00a0 My friend touted them as &#8220;the best cookies in the world&#8221; hehehehe\u00a0 It&#8217;s derived from my grandmothers (and mother&#8217;s) <a href=\"https:\/\/elainecarroll.ca\/wordpress\/?p=279\" target=\"_blank\">chocolate chip cookies<\/a> but with a few modifications here and there.\u00a0 I&#8217;ve used Splenda for this recipe.\u00a0 The Splenda brown sugar was supposed to be cut in half since 1\/2 cup of it is equal to 1 cup of regular brown sugar.\u00a0 I didn&#8217;t do that, I left it as is.\u00a0 I made 3 batches; 1 with butterscotch chips, 1 with chocolate chips, 1 with dried cranberries.\u00a0 All were good but the butterscotch won hands down!\u00a0 A word of caution; these cookies expand when they cook! Ingredients:<\/p>\n<ul>\n<li>1\/2 c.\u00a0 all vegetable shortening<\/li>\n<li>3\/4 c. Splenda white sugar<\/li>\n<li>1\/2 c. Splenda half and half brown sugar<\/li>\n<li>1 beaten egg<\/li>\n<li>1 capful (a tsp?) of vanilla<\/li>\n<li>1 1\/2 c. unbleached flour<\/li>\n<li>1\/2 tsp. baking soda<\/li>\n<li>1\/2 tsp. baking powder<\/li>\n<li>1\/2 tsp. salt<\/li>\n<li>1 c. butterscotch chips<\/li>\n<\/ul>\n<p>Preparation: Blend well the shortening, white and brown sugar until it&#8217;s a creamy texture. Add the vanilla and beaten egg and mix. Blend in the flour, baking soda, baking powder, and salt. Mix well then fold in the chocolate chips. Spoon onto a greased cooking sheet and flatten. Again I didn&#8217;t get the baking time and temperature but try 350 degrees for 15 minutes.
