{"id":457,"date":"2010-09-17T19:19:59","date_gmt":"2010-09-18T00:19:59","guid":{"rendered":"http:\/\/elainecarroll.ca\/wordpress\/?p=457"},"modified":"2017-07-29T21:42:34","modified_gmt":"2017-07-30T02:42:34","slug":"nannys-rhum-cake","status":"publish","type":"post","link":"https:\/\/elainecarroll.ca\/wordpress\/?p=457","title":{"rendered":"Nanny&#8217;s Rhum Cake"},"content":{"rendered":"<p>This is sooooo good (of course, Nanny makes it)!\u00a0 I&#8217;ve also made a variation of it using chocolate cake and pudding mix without the rhum to make cupcakes.\u00a0 One note about this recipe, it rises a lot.\u00a0 if you have a small bunt pan, you might want to make 2 cakes with this one mix or try cutting it in half but that might be complicated.<\/p>\n<p><strong>Glaze<\/strong><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>4 oz butter or margarine<\/li>\n<li>1 c. sugar (I use Splenda)<\/li>\n<li>1\/4 c. water (boiled 5 min.)<\/li>\n<li>1\/4 c. rum<\/li>\n<\/ul>\n<p>Preparation:<\/p>\n<p>Mix first 3 ingredients then add rhum. Prick top of cake to let the glaze sink in. Pour glaze over top of cake and let it soak in. Remove cake on a plate upside down.<\/p>\n<p><strong>Cake<\/strong><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 package of store-bought yellow cake mix<\/li>\n<li>4 eggs<\/li>\n<li>1 small pack vanilla pudding (I use Weight Watchers pudding)<\/li>\n<li>1\/4 c. cold water<\/li>\n<li>1\/2 c. cooking oil<\/li>\n<li>1\/3 &#8211; 1\/2 c.\u00a0 dark rum<\/li>\n<li>About 3 tbsp. chopped nuts (optional)<\/li>\n<\/ul>\n<p>Preparation:<\/p>\n<p>Grease and flour a bunt or angel food pan. Sprinkle chopped nuts on bottom, if desired. Preheat oven to 325 degrees F. Beat all ingredients together for about 4 minutes. Spread over nuts in pan and bake 1 hour and 15 min.
