{"id":498,"date":"2010-12-26T14:28:47","date_gmt":"2010-12-26T19:28:47","guid":{"rendered":"http:\/\/elainecarroll.ca\/wordpress\/?p=498"},"modified":"2010-12-26T14:33:30","modified_gmt":"2010-12-26T19:33:30","slug":"elaines-easy-chicken-or-turkey-pot-pie","status":"publish","type":"post","link":"https:\/\/elainecarroll.ca\/wordpress\/?p=498","title":{"rendered":"Elaine&#8217;s Easy Chicken (or Turkey) Pot Pie"},"content":{"rendered":"<p>This makes 2 chicken pot pies.\u00a0 My measurements are approximate for the sauce.\u00a0 Judge it accordingly when you make it; you want the sauce to be very smooth and not too runny, a little thinner consistency than yogurt.\u00a0 You can make these pies ahead of time and freeze them; just warm around 300 degrees F. when you want to serve them.<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>2 pie shells (home made or bought, I like Tenderflake&#8217;s Deep Dish shells)<\/li>\n<li>2 lbs (1 kg) cubed cooked chicken (about 1&#8243; pieces); garlic powder, dried minced onion, and thyme to fry the chicken with is good.<\/li>\n<li>About 2 cups frozen vegetables (peas, carrots, corn)<\/li>\n<li>2 Puff pastry sheets (usually 1 box has 2) or enough pie dough to cover the pies.<\/li>\n<\/ul>\n<p>Sauce<\/p>\n<ul>\n<li>4 tbsp. butter<\/li>\n<li>About 1\/2 c. flour<\/li>\n<li>About 3.5 c. chicken stock (reduced sodium is best for you)<\/li>\n<li>About 1 tsp freshly ground pepper<\/li>\n<\/ul>\n<p>Preparation:<\/p>\n<p>In a sauce pan, heat butter at a low temperature (do not brown it).\u00a0 When melted, sift in the flour constantly stirring it to remove any lumps.\u00a0 When it&#8217;s thick, slowly add in the chicken stock still stirring constantly to bring it to a silky consistency.\u00a0 Bring to a mild boil, add pepper, and remove from heat.<\/p>\n<p>Preheat oven to 400 degrees F.\u00a0 Add a layer of chicken into each of the pie shells.\u00a0 Sprinkle in a cup of the frozen vegetables in each shell.\u00a0 Add about half off the sauce to each pie, do not overflow, you don&#8217;t want the sauce to spill out of the pie when you apply the puff pastry\/pie dough on top.\u00a0 Place 1 puff pastry sheet on each pie and trim off excess.\u00a0 Gently press the edges of the top and bottom doughs to each other to seal it.\u00a0 Make a small hole about an inch in diameter in each pie to let it vent.<\/p>\n<p>Place pies on a large cookie sheet to catch any sauce in the event it overflows (mine didn&#8217;t but I&#8217;d rather be safe than sorry).\u00a0 Bake for about 25 min or until pie top is a flaky.\u00a0 Serve hot.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This makes 2 chicken pot pies.\u00a0 My measurements are approximate for the sauce.\u00a0 Judge it accordingly when you make it; you want the sauce to be very smooth and not too runny, a little thinner consistency than yogurt.\u00a0 You can &hellip; <a href=\"https:\/\/elainecarroll.ca\/wordpress\/?p=498\">Continue reading <span class=\"meta-nav\">&rarr;<\/span><\/a><\/p>\n","protected":false},"author":1,"featured_media":0,"comment_status":"open","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"footnotes":"","_links_to":"","_links_to_target":""},"categories":[5],"tags":[],"class_list":["post-498","post","type-post","status-publish","format-standard","hentry","category-maincourse"],"_links":{"self":[{"href":"https:\/\/elainecarroll.ca\/wordpress\/index.php?rest_route=\/wp\/v2\/posts\/498","targetHints":{"allow":["GET"]}}],"collection":[{"href":"https:\/\/elainecarroll.ca\/wordpress\/index.php?rest_route=\/wp\/v2\/posts"}],"about":[{"href":"https:\/\/elainecarroll.ca\/wordpress\/index.php?rest_route=\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"https:\/\/elainecarroll.ca\/wordpress\/index.php?rest_route=\/wp\/v2\/users\/1"}],"replies":[{"embeddable":true,"href":"https:\/\/elainecarroll.ca\/wordpress\/index.php?rest_route=%2Fwp%2Fv2%2Fcomments&post=498"}],"version-history":[{"count":6,"href":"https:\/\/elainecarroll.ca\/wordpress\/index.php?rest_route=\/wp\/v2\/posts\/498\/revisions"}],"predecessor-version":[{"id":503,"href":"https:\/\/elainecarroll.ca\/wordpress\/index.php?rest_route=\/wp\/v2\/posts\/498\/revisions\/503"}],"wp:attachment":[{"href":"https:\/\/elainecarroll.ca\/wordpress\/index.php?rest_route=%2Fwp%2Fv2%2Fmedia&parent=498"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"https:\/\/elainecarroll.ca\/wordpress\/index.php?rest_route=%2Fwp%2Fv2%2Fcategories&post=498"},{"taxonomy":"post_tag","embeddable":true,"href":"https:\/\/elainecarroll.ca\/wordpress\/index.php?rest_route=%2Fwp%2Fv2%2Ftags&post=498"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
