{"id":546,"date":"2010-12-28T18:44:06","date_gmt":"2010-12-28T23:44:06","guid":{"rendered":"http:\/\/elainecarroll.ca\/wordpress\/?p=546"},"modified":"2010-12-28T18:47:17","modified_gmt":"2010-12-28T23:47:17","slug":"clean-eatings-apple-strudel","status":"publish","type":"post","link":"https:\/\/elainecarroll.ca\/wordpress\/?p=546","title":{"rendered":"Clean Eating&#8217;s Apple Strudel"},"content":{"rendered":"<p>Another recipe from Clean Eating and it looks delicious.\u00a0 I haven&#8217;t tried it yet, but will at some point.<\/p>\n<p>Ingredients:<\/p>\n<p>Filling:<\/p>\n<ul>\n<li>2.5 lb Golden Delicious apples (about 5 large apples); peeoled, cored, and roughly chopped<\/li>\n<li>1 c unsweetened raisins<\/li>\n<li>1 c\u00a0 chopped unsalted toasted walnuts<\/li>\n<li>3 tbsp raw honey<\/li>\n<li>1 tsp pure vanilla extract<\/li>\n<li>1 tsp ground cinnamon<\/li>\n<li>1\/4 tsp ground nutmeg<\/li>\n<li>12 sheets frozen whole wheat or spelt phyllo, thawed<\/li>\n<li>4 tbsp olive oil<\/li>\n<li>1.2 c whole wheat bread crumbs<\/li>\n<\/ul>\n<p>Preparation:<\/p>\n<p>Arrange rack in center of oven and preheat oven\u00a0 to 400 degrees F.\u00a0 Line a large rimmed baking sheet with either parchment paper or a silicone baking mat.<\/p>\n<p>In a large bowl, combine apples, raisins, walnuts, honey, vanilla, cinnamon, and nutmet; set aside<\/p>\n<p>Arrange 1 sheet of phyllo on a clean work surface, long edge parallel to the counter&#8217;s edge.\u00a0 Using a pastry brush, brush a minimal amount of oil onto phyllo, then evenly scatter 2 tsp bread crumbs over top.\u00a0 Place another phyllo sheet directly on top.\u00a0 Again brush with oil and scatter bread crumbs.\u00a0 Repeat layers for a total of 6 sheets of phyllo.\u00a0 Do no brush oil or scatter bread crumbs on top layer.<\/p>\n<p>Spread half of apple filling into a long log on top of phyllo sheets, leaving 1&#8243; at bottom and sides of phyllo.\u00a0 Snugly roll all phyllo layers over filling, jellyroll style, tucking in sides after first roll covers filling.\u00a0 Repeat steps to assemble and roll a second strudel with remaining 6 phyllo sheets and remaining half of apple filling.\u00a0 You should be left with 2 rolls, each measuring about 3&#8243; x 16&#8243;.\u00a0 Carefully transfer both rolls to baking sheet and brush rolls with oil.<\/p>\n<p>Bake strudels until deep golden brown and crisp, about 30 &#8211; 40 min.\u00a0 Transfer baking sheet to wire rack to cool.\u00a0 To serve, use a serrated knife to cut each roll crosswise into 6 portions.<\/p>\n<p>Serve warm or at room temperature with 1 tsp <a href=\"https:\/\/elainecarroll.ca\/wordpress\/?p=548\" target=\"_blank\">Cinnamon Honey Cream Cheese Sauce<\/a>.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Another recipe from Clean Eating and it looks delicious.\u00a0 I haven&#8217;t tried it yet, but will at some point.
