{"id":552,"date":"2010-12-28T19:43:37","date_gmt":"2010-12-29T00:43:37","guid":{"rendered":"http:\/\/elainecarroll.ca\/wordpress\/?p=552"},"modified":"2010-12-28T19:43:37","modified_gmt":"2010-12-29T00:43:37","slug":"clean-eatings-breakfast-phyllo-bites","status":"publish","type":"post","link":"https:\/\/elainecarroll.ca\/wordpress\/?p=552","title":{"rendered":"Clean Eating&#8217;s Breakfast Phyllo Bites"},"content":{"rendered":"<p>Another recipe from Clean Eating and it looks delicious.\u00a0 I haven&#8217;t tried it yet, but will at some point.<\/p>\n<p>Ingredients:<\/p>\n<p>Filling:<\/p>\n<ul>\n<li>4 egg whites (I&#8217;ll be using 3 whole eggs)<\/li>\n<li>1 whole egg<\/li>\n<li>1 tsp dried oregano<\/li>\n<li>1 tsp extra virgin olive oil<\/li>\n<li>12 c spinach, roughly chopped<\/li>\n<li>1 clove garlic, minced<\/li>\n<li>1 med tomato, finely diced<\/li>\n<li>1\/4 c crumbled low-fat feta cheese<\/li>\n<li>8 sheets whole wheat phyllo dough<\/li>\n<li>olive oil cooking spray<\/li>\n<\/ul>\n<p>Preparation:<\/p>\n<p>Preheat oven to 400 degrees F.\u00a0 Heat medium nonstick saute pan over medium-high heat.\u00a0 In a bowl, whisk egg whites, egg, and oregano.\u00a0 Pour egg mixture into pan, stirring genly until set, about 2 min.\u00a0 Place scrabled eggs on a plate to cool.<\/p>\n<p>Wipe saute pan clean, add oil and heat over medium heat.\u00a0 Gradually add spinach and garlic until spinach is wilted (you should be left with about 1 cup cooked spinach).\u00a0 Place spinach mixture in a bowl and set aside to cool, about 5 min.<\/p>\n<p>In a medium bowl, gently toss together scrambled eggs, spinach mixture, tomato, and feta; set aside.<\/p>\n<p>Working quickly, roll out 1 sheet of phyllo onto a clean work surface.\u00a0 Mist with cooking spray.\u00a0 Place a second sheet on top and mist again with cooking spray.\u00a0 Cut phyllo lengthwise into 4 strips (each about 3 1\/4&#8243; wide).\u00a0 Place 1\/4 cup filling onto 1 end of 1 strip.\u00a0 Fold corner over filling to opposite side of strip, making a triangle.\u00a0 Fold triangle up to meet straight side, then across again.\u00a0 Continue folding over triangle until you reach end of phyllo strip.\u00a0 Mist with cooking spray.\u00a0 Repeat this procedure with remaining 3 strips and 6 phyllo sheets, assembling a total of 16 phyllo bites (214 calories per 4 bites).<\/p>\n<p>Transfer phyllo bites to baking sheet and bake in preheated oven for 10 &#8211; 11 min., until golden brown around edges.<\/p>\n<p>Freeze instructions:\u00a0 Place phyllo bites\u00a0 on a sheet pan in a single layer and place in freezer 20 minutes, until solid.\u00a0 Then gently transfer them to a freezer bag and seal tightly, removing as much air as possible.\u00a0 Can be frozen for up to 6 months.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Another recipe from Clean Eating and it looks delicious.\u00a0 I haven&#8217;t tried it yet, but will at some point.
